This morning, I needed a breakfast recipe that was going to fill me up, so I have enough energy to start my day. So, I have made a Cashew and Coconut porridge and it’s absolutely delicious! So, I thought I would share this recipe with all of you.
I was inspired to make this porridge by Deliciously Ella and I have just taken her recipe and adapted it to make it my own. The changes I have made are to add Coconut milk instead of Almond milk because I think the coconut just gives it a nice creamy taste, plus I have added some Ground Cinnamon, which goes really with the Ground Ginger. This combination gives the porridge more flavor and it gives me a good kick-start to my day!
This Cashew and Coconut porridge is a great breakfast because the coconut oil is a good source of fat and will help my brain function better.
Ingredients:60g rolled oats
60g rolled oats
100ml Coconut Milk
1 teaspoon coconut oil
1 teaspoon honey, I recommend Manuka honey (optional)
½ teaspoon ground ginger
½ teaspoon ground cinnamon
2 tablespoon almond butter
Sprinkle with chia seeds on top
All you have to do is place the oats in a saucepan and pour in 150ml of boiling water. Leave the oats to soak for 10minutes: All the water should have absorbed and they should be just about soft enough to eat. Then, chuck everything in the saucepan and cook for 5-10minutes, until its lovely and creamy.
